All Hail Seitan: A Seitan Recipe that really works


Gluten is a big buzz word nowadays. Its not right for everyone (definitely off limits for those with celiac!), but it is a great high protein option for vegans. Seitan is basically a loaf made from vital wheat gluten. You can cook it several ways: steaming, boiling or baking. I've tried a couples times before with little success: its been too rubbery or dry. But, finally I've found a recipe that works. Great flavour and texture, yay! Feel free to change the spices however you'd like. This is great warmed up for dinner with a side of veggies and potatoes, added into a stir fry, on a sandwich - SO many options. 



  • 2 cups vital wheat gluten

  • 1/2 cup beans, mashed

  • 1.5 tsp paprika

  • 2.5 tsp garlic powder

  • sprinkle of italian seasoning

  • pinch of salt

  • 1 cup of vegetable broth

  • 1/4 cup canola or vegetable oil

  • 2 tbsp low sodium soy sauce

  • 2 tbsp worcestershire sauce

  • few drops of liquid smoke (don't overdo this!)

Take a large bowl, and mix all the ingredients together. Use your hands to work the dough a bit and make sure its well incorporated.  Split the dough up into three even pieces and roll into 3 even cylinders (don't be afraid to work the dough a bit to smooth it out a bit). Place each piece in foil and seal very well.  Bake seam side up at 350 degrees for 30 minutes, then turn seem side down and cook for another 30. Store the fridge or freezer.
